What is Mudammas Ful?

In essence, ful mudammas are stewed broad beans, or fava beans, usually topped with a quality extra virgin olive oil and a dash of ground cumin. Warm pita bread is served alongside, and also lemon juice, fresh vegetables, and herbs are added for flavor.

This creamy, filling fava bean porridge or dip can be dressed up in a variety of ways. I make a special lemon and garlic sauce with hot chili peppers because I like my foul mudammas to have a little kick of spice. The lemon tames the peppers a bit, so it’s really not that spicy, but it adds a great kick!
