  • 1 small Eggplant (1 lb, sliced, and slices cut into quarters)

  • 1 tbsp Olive oil
  • 1/4 tsp Sea salt
  • 1/8 tsp Black pepper

INSTRUCTIONS

  1. Set the oven’s temperature to 375°F, or 190°C.
  2. In a blender, combine all sauce ingredients. Blend until smooth. Taste and adjust salt and pepper as necessary.
