Ingredients

Blended Sauce:

  • 2 red bell peppers, seeded and cut into chunks
  • 2 tomatoes, cut into chunks
  • 1 habanero pepper, seeded
  • 1 clove garlic
  • 1/4 cup chicken stock

Rice:

  • 1/4 cup vegetable oil
  • 1 small yellow onion, diced
  • 3 tablespoons tomato paste
  • 1 1/2 cups parboiled rice, such as BEN’S ORIGINAL
  • 3 cups chicken stock, or more as needed
  • 2 teaspoons curry powder
  • 1 teaspoon dried thyme
  • 1 teaspoon ground white pepper
  • 2 bay leaves
  • salt to taste
  • 1 cup mixed vegetables
  • 3 1/2 tablespoons salted butter

Directions

  • In a blender or food processor, combine the bell peppers, tomatoes, habanero pepper, garlic, and 1/4 cup stock; process until smooth. It will have the consistency of thick marinara sauce. Put aside.
  • Heat the oil in a big pot over medium heat. Add the chopped onion and cook for about 5 minutes, or until the onion is soft and transparent.
  • Stir continuously for approximately five minutes after adding the tomato paste. After adding, cook the rice for about five minutes.
  • Add the blended sauce mix, 3 cups stock, bay leaves, curry powder, thyme, and white pepper, and stir. Season with salt to taste. Before boiling, give the mixture a good stir.
  • Reduce the heat to low, cover, and cook the rice for about ten minutes, or until it has absorbed all of the liquid. If more stock is needed to make the rice softer.
